Oatmeal Raisin Cookies

Black Bean Pico De Gallo

2 sticks (½ lb.) - Soft butter
½ cup – Brown sugar
¼ cup – Granulated sugar
1 – Large egg
1 – tsp. Pure vanilla extract
1 cup – All-purpose flour
1 ½ cups – Rolled oats
½ tsp. – Cinnamon
½ tsp. - Baking soda
¼ tsp. – Salt
1 cup – Raisins  

Instructions

• In mixer, cream together butter & sugar
• Add egg and continue beating until light and fluffy
• Stir in vanilla
• In a separate bowl combine the rest of the dry ingredients. Mix well
• Add dry ingredients into the wet ingredients. Stir until just combined.
• Scoop dough onto cookie sheet with parchment paper. Leave a good inch in between cookies.
• Bake in a pre-heated 350-degree oven for 13-15 minutes.

I use a small ice cream scoop to form the cookie dough into balls. The scoop is approximately 1-2 Tbsp.

For me this recipe yields about 22-24 cookies.
